Georgiaa Khinkali (грузинские хинкали).
Cooked Georgiaa Khinkali:
1)First, pour the flour into the shape of a mound, then make a depression in the center, pour warm water into it and add the egg and salt.
2)Then knead the dough and leave it covered for 20-30 minutes to mature. After 20-30 minutes have passed, divide the dough into pieces and roll out into thin flat cakes.
3)The filling on the flatbread should be approximately equal to the amount of dough. It is very important that the dough in the finished khinkali does not tear. Then we tied the khinkali into a knot, collecting the ends into small puffs. You need to leave a small tail on the top of the dumpling, which will make it convenient to hold it when eating.
4)To prepare minced meat, finely chop the meat and mix it with chopped onion. Dilute the resulting minced meat with pre-prepared meat broth. Add as much as the meat can absorb, this is how the famous juice appeared inside the khinkali. Season the minced meat with salt, pepper and herbs.
5)Boil khinkali in salted water; the finished khinkali float to the top. They must be removed carefully so as not to damage or tear the dough. Khinkali is served with herbs and sprinkled with black pepper.
